Project Background:
Sun-dry processing of cassava consists of roots being split and exposed to direct sun-light and has been shown to result in high residual levels of cyanogens in the final product. The incorporation of a crushing step prior to drying will increase cellular damage allowing the release of endogenous linamarase which is an important limiting factor to cyanogen removal from cassava.

Project Objectives:
1.)To investigate crushing as an additional step prior to sun-dry processing of cassava as a low technology means of further reducing the residual quantity of cyanogens present in the final product. 2.)To field test and adapt the technology using participatory evaluation.

Intended Outputs:
The intended outputs are: 1) Improved cassava processing method developed. 2) Cassava processing method adapted to local conditions. 3) Information booklet for target organisations describing the procedure for improved processing of cassava published.
